These cookies are the perfect balance of soft and chewy using flour, baking soda, baking powder, espresso powder, salted butter, brown sugar, sugar, eggs, and vanilla. The coffee flavor comes from the use of espresso powder. I use King Arthur brand which packs a lot of punch in only 2 teaspoons. Using vanilla bean paste captures a lovely vanilla flavor and also leaves pretty little vanilla bean specks in the cookies. If you don’t have vanilla bean paste, you can use a high-quality vanilla extract.
Decorating Notes
These cookies are topped with a vanilla coffee glaze and a latte heart pattern. When decorating the cookies, I recommend decorating one cookie at a time. Start by spreading the coffee glaze on the cookie, then immediately follow by piping small white dots around the cookie. The glaze needs to still be wet in order for the pattern to turn out properly. Use a toothpick or a decorating scribe to pull through each dot in a circular motion around the edge of the cookie. The dots will then resemble the cutest little hearts!
