These lemon shortbread cookies are light, buttery, sweet, and flavored with a hint of lemon. The use of a citrus stamp for these cookies makes them look just as summery as they taste! I use the citrus stamps from Nordic Ware, but if you don’t have a stamp, you can use a round cookie cutter or biscuit cutter to cut the cookies.
