Method
There are a few different methods for making vanilla sugar, but the method I’m sharing below is a simple 2:1 ratio of sugar to vanilla beans. For every 2 cups of sugar, you’ll need 1 vanilla bean. Simply scrape seeds out of a vanilla bean pod, pulse with some granulated sugar, and let the vanilla magic happen. The end result is a lovely speckled sugar that is rich with vanilla flavor.
Other methods of vanilla sugar are even more simplified. You may choose to simply split open a vanilla bean pod (leaving seeds in tact) and place in a canister of sugar. Though the flavor won’t be as intense, you’ll be left with an infused vanilla sugar without specks. Continue to replenish sugar in the container with the beans for an ongoing supply of vanilla-infused sugar.
